Biscuits and gravy is a Southern breakfast of buttermilk biscuits split open and covered in a peppery white gravy made from pork drippings, flour, and milk.
Where it comes from
The dish grew out of the rural South, where cheap pork fat and flour stretched a meal further than meat alone could, feeding a household on ingredients that kept well and cost little.
What cooks argue about
The technical fork is the roux: cooking the flour and pork fat only briefly keeps the gravy pale and mild, while browning it longer adds a deeper, nuttier flavor but risks scorching the fat.
