Where it comes from
Waffle irons arrived in America with Dutch settlers, and the dish spread widely once electric waffle irons became common household appliances in the early twentieth century, replacing the fireplace irons used before.
What cooks argue about
Cooks argue over adding cornstarch or extra egg white for a crisper exterior against a plainer batter closer to pancakes, and over an airier yeasted overnight batter versus a quick baking-powder mix.
