Ossetian Pie

Ossetian pie is a round, flat yeasted pie filled edge to edge with a thin layer of cheese and potato, rolled thin so the filling stays visible through the dough.

Where it comes from

It comes from North Ossetia in the Caucasus, where a household traditionally baked three at a time for a full meal, each pie thin enough that the filling to dough ratio stays high.

What cooks argue about

The disagreement is over thickness: rolling the dough thin enough to see the filling through it is the mark of a good pie, though how thin is too thin, where it tears, stays disputed.
