Meatloaf
Ground beef mixed with breadcrumbs, egg, and onion, shaped into a loaf and baked, usually glazed on top with a ketchup-based sauce.
Where it comes from
Ground meat loaves appear in German and Scandinavian cooking brought over by immigrants, and the dish became a common way to stretch a small amount of meat with breadcrumbs and eggs on a tight household budget.
What cooks argue about
Cooks argue over baking free-form on a sheet pan, which lets fat drain away, against baking in a loaf pan, which holds moisture but can leave the loaf sitting in grease.
