Where it comes from
Sausages in bread trace to German immigrant vendors in American cities in the late nineteenth century. The exact vendor credited with first serving one in a bun is disputed, with several cities claiming the origin.
What cooks argue about
Regional cooks argue over toppings: Chicago style bans ketchup outright, while other regions allow it freely, and cooks disagree over grilling the sausage for a charred skin versus steaming it for a softer bite.
