Where it comes from

Cheap bread and inexpensive processed cheese made it a common lunch during the Depression, when families needed a filling meal that used few ingredients and little fuel to cook.

What cooks argue about

Cooks argue over butter versus mayonnaise spread on the bread for browning, and over low heat for a slow, even melt against higher heat that browns the crust faster while the center stays cold.
