Philly Cheesesteak
Thin-sliced beef griddled with onion and topped with melted cheese, packed into a long roll, eaten hot while the roll soaks up the juices.
Where it comes from
It began at a Philadelphia hot dog stand in the 1930s, when the vendors started grilling beef instead of sausage and a cab driver reportedly asked for one, starting a local dish that later spread beyond the city.
What cooks argue about
Locals argue over Cheez Whiz, provolone, or American cheese, each with strong defenders, and over onions cooked soft and sweet against left with some bite and crunch.
