Lobster Roll
Chunks of cooked lobster meat, bound lightly with mayonnaise or warm butter, piled into a split-top hot dog bun that is toasted on the sides.
Where it comes from
It became a coastal New England specialty in the twentieth century, when lobster was cheap and plentiful and roadside stands along the Maine coast served it simply, in a bun, to feed travelers quickly.
What cooks argue about
Cooks argue over cold lobster meat dressed in mayonnaise, the Maine style, against warm lobster tossed in melted butter, the Connecticut style, and each side treats the other as a lesser version.
