Shkmeruli
Shkmeruli is chicken pieces fried, then simmered in a sauce of heavy cream, butter, and a heavy amount of garlic until the sauce thickens around the meat.
Where it comes from
It's named for the Georgian village of Shkmeri, and its garlic-heavy cream sauce reflects Georgian cooking's comfort with dairy fat alongside the country's stronger wine and vegetable traditions.
What cooks argue about
The real argument is garlic quantity: recipes range widely on how much to use, and cooks disagree over whether the garlic should cook down into the cream or stay assertive and raw-tasting at the end.
Nobody has published a shkmeruli recipe yet. The page stays out of search until one exists, which is the rule for every thin page here.
