Fesenjan
Fesenjan is a Persian stew of chicken, sometimes duck, simmered for hours in ground walnuts and pomegranate molasses until the sauce turns dark, thick, and balanced between sweet and sour.
Where it comes from
Walnut trees and pomegranates both grow around Gilan province on the Caspian coast, which is why the stew is tied to that region, and its sweet and sour sauce reflects a wider Persian habit of pairing meat with fruit rather than salt alone.
What cooks argue about
The core argument is the sugar to molasses ratio: too sour reads unfinished, too sweet buries the tartness that defines the dish, and cooks calibrate to their own molasses' acidity.
