Where it comes from

The name specifically distinguishes it from the same dish made with beef, called cottage pie, a split in naming that tracks which meat a household had on hand rather than any difference in method.

What cooks argue about

Getting the mashed potato top to brown without drying out is the real question: some rough up the surface and brush on butter before a broiler blast, others bake longer at lower heat instead.
