Fish and Chips
Fillets of white fish, usually cod, coated in a beer batter and deep fried crisp, served with thick fried potatoes and often malt vinegar.
Where it comes from
It grew out of separate British traditions, fried fish associated with Jewish immigrant communities and fried potatoes, merged into one dish sold from stalls and shops in industrial towns where cheap, hot food mattered to workers.
What cooks argue about
Beer's carbonation is meant to make the batter lighter and crisper than a plain flour and water mix, though what matters more to most fryers is keeping the oil hot enough that it seals fast.
