Garlic Naan
A leavened flatbread pressed with chopped garlic and slapped onto the wall of a tandoor, where it puffs and chars in patches. Brushed with ghee or butter right off the fire.
Where it comes from
Naan is tied to Punjab's tandoor cooking tradition, which spread into Delhi restaurants after Partition brought Punjabi cooks and clay-oven techniques into the city. Garlic naan is a restaurant-driven variation on the plain bread.
What cooks argue about
The bread depends on tandoor heat and the way dough sticks to a hot clay wall, something a home oven or skillet only approximates, so cooks argue over which substitute gets closest.
Nobody has published a garlic naan recipe yet. The page stays out of search until one exists, which is the rule for every thin page here.
