Where it comes from

Sweden's own government account publicly noted in 2018 that the meatballs likely trace to a similar recipe brought back from the Ottoman Empire by King Charles the Twelfth, undercutting their reputation as a purely native dish.

What cooks argue about

Pan frying the meatballs in butter, in batches, builds the browned bits the cream gravy is made from; baking a full tray in the oven is easier but skips that step entirely.
