Where it comes from

The bread is a Levantine breakfast fixture, sold hot from neighborhood bakeries each morning, and its topping depends on the local za'atar blend, which mixes wild thyme, sumac, and sesame differently town to town.

What cooks argue about

The disagreement is dough thickness: a thinner base crisps fully under the za'atar oil but can dry out, while a thicker, more bread-like base stays soft but risks an underbaked, doughy center.
