Fattoush
Fattoush is a chopped salad of cucumber, tomato, and other vegetables tossed with torn or fried pita and dressed with olive oil, lemon, and the tart red spice sumac.
Where it comes from
The salad grew out of Levantine kitchens that refused to waste stale flatbread, frying or toasting it instead of throwing it out, a habit shared with other bread salads across the eastern Mediterranean.
What cooks argue about
Cooks argue over frying the pita in oil until crisp, which turns soggy fast once dressed, or toasting it dry, which stays crunchy longer but loses the fried flavor.
