Horiatiki Salad
Tomato, cucumber, green pepper, red onion and kalamata olives dressed in olive oil, with a slab of feta laid whole on top rather than crumbled in.
Where it comes from
Called village salad, its lack of lettuce and reliance on olives, cheese and whatever grew in the garden reflect a period when villagers cooked mostly from what their own land produced.
What cooks argue about
The sharpest divide is dressing: some cooks use only olive oil and a pinch of oregano, arguing the tomato and feta already provide enough acid, others add red wine vinegar.
