Tzatziki

Strained yogurt mixed with grated cucumber, garlic, olive oil and dill, salted and served cold as a sauce or dip.

Where it comes from

Built around draining both yogurt and cucumber so the sauce stays thick, a fix for two naturally wet ingredients in something meant to hold its shape on bread rather than run off it.

What cooks argue about

Squeezing the water out of the grated cucumber is the step people skip and then wonder why the sauce turns watery within an hour; garlic amount is the other fight.
