Piri Piri Sauce

A hot sauce of chopped chile, garlic, and citrus steeped in olive oil, used to marinate grilled chicken or spooned on at the table as a condiment.

Where it comes from

The sauce traces to Portuguese contact with African chile peppers along trade routes to Mozambique and Angola, where the small, hot piri piri chile grew. The sauce carried back into Portuguese cooking and became tied to grilled chicken.

What cooks argue about

Cooks disagree on whether the chiles get cooked into the oil, which mellows the heat, or steeped raw and left to sit, which keeps the sauce sharper and hotter over time.
