Souvlaki

Cubes of marinated pork skewered and grilled over hot coals until charred at the edges, usually served with pita, lemon and tzatziki.

Where it comes from

A street food built for grilling small, fast-cooking pieces of meat over open flame rather than slow-roasting a whole cut, suited to quick service from small stalls.

What cooks argue about

Marinating time is the argument: long enough in lemon, oil and oregano to season the meat, but too long and the acid starts breaking the surface down into mush instead of staying firm.
