Gyro
Stacked meat, usually pork, roasted on a vertical spit and shaved off in strips, wrapped in warm pita with tzatziki, tomato and onion.
Where it comes from
The vertical spit technique traces to methods carried through Ottoman and Middle Eastern trade routes, adapted in Greece with pork or a pork-beef mix and sold from stalls as fast, cheap food.
What cooks argue about
Whether french fries belong stuffed inside the wrap splits opinion hard: standard in much of Greece, and an outrage to cooks who see the wrap as meat, tomato and tzatziki only.
