Where it comes from
The dish grew from the same vertical spit roasting technique used across the Ottoman Empire, and its name comes from a Turkish word for turning, reflecting how central the rotation is to the cooking itself.
What cooks argue about
The debated point is marinade time: a short soak keeps the meat mild, while a full day breaks it down further but risks a mushy, over soured result.
