Peri-Peri Chicken
Peri-peri chicken is a whole bird butterflied flat, marinated in a hot chile sauce built from African bird's eye chiles, garlic, and lemon, then grilled or roasted until charred.
Where it comes from
The sauce and the chile itself trace to Portuguese traders who brought chiles from the Americas into Mozambique and Angola, where the pepper naturalized and the marinade became a fixture of southern African Portuguese cooking.
What cooks argue about
The core fork is the chile to oil ratio in the marinade: more chile gives sharper heat that can overwhelm the lemon, while a milder mix lets the garlic and citrus come through.
