Suya

Suya is thin strips of beef skewered and grilled, coated before and after cooking in a dry spice mix built on ground peanuts and dried chile.

Where it comes from

The skewer is sold almost exclusively as street food across Nigeria and neighboring West Africa, and its peanut based spice mix, called yaji, reflects the peanut's importance as a cheap, widely grown crop in the region.

What cooks argue about

The divide is how the peanut spice is applied: once before grilling, or dusted on again right off the fire so the second coat stays raw and crunchy.
