Mujadara
Mujadara is lentils and rice cooked together until soft, topped with onions fried down slowly until dark and sweet.
Where it comes from
The combination of lentils and grain appears across the medieval Arab world as an inexpensive dish that didn't need meat, and its onion topping became the part cooks compete over rather than the base itself.
What cooks argue about
The whole dish rides on the onions: how long and how low they're fried decides whether they turn deeply caramelized, almost burnt at the edges, or stay merely softened.
