Chicken Biryani

Basmati rice and bone-in chicken marinated in yogurt and spice, layered and steamed together so the grains pick up flavor from the meat below. The rice stays separate and fluffy rather than sticking together.

Where it comes from

Chicken biryani is a newer variant on older mutton and goat versions that dominated royal and regional kitchens, since chicken was historically cheaper and cooked faster. It spread widely as chicken became a common protein across South Asia in the 20th century.

What cooks argue about

The main argument is rice doneness before layering: par-boiling it too far leaves mush after the final steam, too little leaves hard, undercooked grains at the center.
