Hyderabadi Biryani

Basmati rice and marinated goat layered raw and sealed to steam together, so the meat's juices work directly into the rice. More intensely spiced and drier than most other biryanis.

Where it comes from

The dish is tied to Hyderabad's Nizam-era kitchens, where Mughal court cooking blended with the local Deccan cuisine over generations. The kacchi, or raw-layered, method is considered its defining trait.

What cooks argue about

The kacchi method itself is the argument: sealing raw marinated meat under part-cooked rice risks undercooked meat or scorched rice. Some restaurants now part-cook the meat first, a shortcut purists reject.
