Pita Bread
A round yeasted flatbread rolled thin, baked in a very hot oven until it puffs into a hollow pocket, soft and a little chewy.
Where it comes from
The pocket comes from thin, wet dough hitting extreme heat so steam expands the middle before the crust sets, a technique built for hearth and oven baking across the eastern Mediterranean.
What cooks argue about
Forming the pocket depends on the dough still being warm from proofing when it hits a very hot stone, skillet or flame; cold dough more often bakes flat instead of puffing hollow.
