Okonomiyaki

A savory pancake of shredded cabbage bound with flour and egg batter, layered with pork belly and griddled until the outside crisps, then brushed with a thick, tangy-sweet sauce. Dense, and eaten hot off the griddle.

Where it comes from

The dish grew out of Osaka street food in the postwar years, when wheat flour was cheap and cabbage stretched a small amount of meat further. Hiroshima developed a separate layered version built around noodles rather than a mixed batter.

What cooks argue about

Osaka and Hiroshima cooks argue over mixing everything into one batter versus stacking cabbage, batter, and noodles in distinct layers, which changes whether the cabbage stays crunchy or steams down soft.
