Pico de gallo is a Mexican table salsa built to be assembled fast with whatever ripe produce is on hand, distinct from cooked salsas that need time over heat.

What cooks argue about

The main disagreement is salting: salt drawn out early makes the tomato watery, so some cooks salt right before serving while others drain the diced tomato first.
