Where it comes from
The taco predates written Mexican history as a way to wrap tortillas around any filling for eating without utensils; it only spread into a fixed national dish through migration to Mexican cities and the United States.
What cooks argue about
The main fight is the tortilla: warmed briefly for flexibility, or lightly fried in fat for a bit of crunch that some argue is closer to how street vendors actually serve it.
