Quesadilla
A flour or corn tortilla is folded around melted cheese and griddled until the outside crisps and the cheese turns fully liquid inside.
Where it comes from
The quesadilla is one of Mexico's plainer street foods, built around masa or wheat tortillas and whatever cheese was regionally available, long before fillings like meat or squash blossom became common additions.
What cooks argue about
Cooks argue over the tortilla: corn holds up to griddling but can crack at the fold, while flour bends without breaking but crisps less and can taste doughier.
