Pour the hot espresso into a cocktail shaker or a jar with a tight lid. Stir in the sugar until it dissolves.
- 2
Add 4-5 ice cubes, seal and shake hard for 15-20 seconds, until the outside is frosty and the coffee is topped with a pale foam.
- 3
Fill a tall glass with fresh ice cubes and strain the coffee over them.
- 4
Froth the cold milk with a handheld frother for 30-45 seconds, until it doubles in volume and looks thick and velvety.
- 5
Spoon the foam over the coffee and serve at once with a straw.
