Loukoumades, Greek Honey Puffs with Cinnamon and Walnuts

11 ingredients

8 steps

What you need

  • 250 ml (1 cup) lukewarm water, about 38 °C (100 °F)
  • 7 g (1 packet) active dry yeast
  • 1 tsp sugar, for the batter
  • 250 g (2 cups) all-purpose flour
  • 1/2 tsp salt
  • 120 g (1/3 cup) honey
  • 120 g (1/2 cup) granulated sugar, for the syrup
  • 60 ml (1/4 cup) water for the syrup
  • 1 l (4 cups) vegetable oil, for frying
  • 1 tsp ground cinnamon
  • 40 g (1/3 cup) walnuts, chopped

Method

Restated from the original video

  1. 1

Pour the lukewarm water into a large bowl and stir in the yeast and the teaspoon of sugar. Leave until foamy, 5-10 min.

  2. 2

Add the flour and salt and beat with a wooden spoon for 2 min into a thick, sticky batter about as loose as very thick pancake batter.

  3. 3

Cover the bowl and leave it somewhere warm until doubled and full of bubbles, 1-1 1/2 hours.

  4. 4

Meanwhile, put the honey, granulated sugar and the syrup water in a small pan. Bring to a boil and simmer for 5 min, then keep warm.

  5. 5

Pour the oil into a deep, heavy pot to a depth of about 5 cm (2 in) and heat to 180 °C (350 °F).

  6. 6

Stir the risen batter down once. Dip a teaspoon in a cup of water, scoop up a heaped spoonful of batter and push it into the oil with a second wet spoon.

  7. 7

Fry 8-10 at a time, turning them, until puffed and deep golden all over, 3-4 min. Lift out with a slotted spoon and drain on paper towels.

  8. 8

Pile the hot puffs on a platter, pour the warm syrup over them and finish with the cinnamon and walnuts. Serve at once.

About loukoumades

Yeasted dough dropped into hot oil, fried into golden, hollow balls, then soaked in honey syrup and dusted with cinnamon or crushed walnuts.

What cooks argue about

Cooks disagree on batter looseness: a wetter, well-fermented dough fries lighter and more hollow inside, while a stiffer dough is easier to shape but bakes up denser.
