Warm Cretan Rakomelo with Honey, Cinnamon and Cloves
4 ingredients
7 steps
What you need
- 200 ml (3/4 cup plus 1 tbsp) raki, tsikoudia, or grappa
- 2 tsp honey, plus more to taste
- 1 piece cinnamon stick
- 7 whole cloves
Method
Restated from the original video
- 1
Pour the raki into a small saucepan and add the cinnamon and 3 of the cloves.
- 2
Set the pan over the lowest heat. Warm it gently until steaming, 3-4 min, about 80 °C (175 °F) if you have a thermometer. Do not let it boil, or much of the alcohol escapes.
- 3
Keep the pan away from any open flame while it heats, since the vapor is flammable.
- 4
Take the pan off the heat and stir in the honey until it dissolves fully, about 1 min.
- 5
Let the spices steep for 2 min, then taste and stir in a little more honey if you want it sweeter.
- 6
Lift out the cinnamon and the cloves. Pour the rakomelo into 4 small shot glasses and drop 1 fresh clove into each.
- 7
Serve hot, in small sips.
