What you need
- 500 g (1 lb) onions, red or white, halved and thinly sliced
- 3 tbsp extra virgin olive oil
- 40 g (1/4 cup) raisins, golden or dark

- 60 ml (1/4 cup) white wine vinegar
- salt, to taste
- black pepper, freshly ground, to taste
Method
Restated from the original video
- 1
Put the raisins in a small bowl, cover with warm water and leave to plump for 10 min. Drain.
- 2
Warm the olive oil in a wide frying pan over medium heat.
- 3
Add the onions with a pinch of salt and cook, stirring now and then, until soft and translucent, 10-12 min. Lower the heat if they start to brown at the edges.
- 4
Stir in the raisins and the sugar and cook for 2 min so the sugar melts into the onions.
- 5
Pour in the vinegar and let it bubble for 1 min, until the sharp smell softens.
- 6
Simmer gently, stirring often, until the liquid thickens and turns glossy around the onions, 6-8 min. Add a splash of water if the pan dries out before the onions are tender.
- 7
Taste and balance with more salt, a little more vinegar or a pinch more sugar. Grind in black pepper.
- 8
Spoon it over grilled fish, roast meat or vegetables, hot or cooled. It keeps in the fridge for up to 5 days.
