What you need

  • 1 tbsp vegetable oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 500 ml (2 cups) ketchup
  • 80 ml (1/3 cup) apple cider vinegar
  • 100 g (1/2 cup packed) dark brown sugar
  • 2 tbsp molasses
  • 1 1/2 tbsp Worcestershire sauce
  • 1 tbsp yellow mustard
  • 2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 120 ml (1/2 cup) water

Method

Restated from the original video

  1. 1

Warm the oil in a medium saucepan over medium-low heat. Add the onion and cook until soft and see-through, 5-6 min.

  2. 2

Add the garlic and stir for 30 seconds, until it smells sweet.

  3. 3

Stir in the ketchup, cider vinegar, brown sugar, molasses, Worcestershire sauce, mustard, smoked paprika, black pepper, cayenne and water.

  4. 4

Bring to a gentle bubble, turn the heat to low and let it cook, lid off, for 15-20 min, stirring often so it does not catch. It is ready when it coats the back of a spoon thickly.

  5. 5

Taste and balance with a splash more vinegar for tang or a little more sugar for sweetness.

  6. 6

For a smooth sauce, blend until no pieces of onion remain.

  7. 7

Cool, then keep in a covered jar in the fridge for up to 2 weeks.

About bbq sauce

BBQ sauce here is a tomato based sauce built on ketchup, brown sugar, and vinegar, simmered until it thickens into a sweet, sharp glaze for grilled meat.

What cooks argue about

The regional fight is bigger than any single recipe: ketchup sweet sauce dominates outside the South, but cooks in different states argue vinegar, mustard, or mayonnaise bases suit pork better than a sugary tomato glaze.
