Golden Fried Yeast Dough Balls with Nutmeg
7 ingredients
10 steps
What you need
- 450 ml (1 3/4 cups plus 2 tbsp) warm water
- 7 g (2 1/4 tsp) active dry yeast
- 420 g (3 1/2 cups) all-purpose flour
- 100 g (1/2 cup) granulated sugar
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1 l (4 cups) vegetable oil, for deep frying
Method
Restated from the original video
- 1
Stir the yeast into the water and leave it for 5 min until foamy.
- 2
Mix the flour, sugar, salt and nutmeg in a large bowl.
- 3
Pour in the yeast water and beat with a wooden spoon or your hand for 2 min into a thick, smooth, sticky batter.
- 4
Cover the bowl and leave it somewhere warm until the batter doubles and is full of bubbles, 1-1 1/2 hours.
- 5
Stir the batter once to knock out the biggest bubbles.
- 6
Pour the oil into a deep heavy pot to a depth of 6 cm (2 1/2 in) and heat to 175 °C (350 °F). A drop of batter should sizzle and rise to the top within a few seconds.
- 7
Squeeze a ball of batter about 4 cm (1 1/2 in) wide up through your fist, cut it off with your thumb, or push it off a spoon, and drop it into the oil. Fry 6-8 balls at a time.
- 8
Fry, turning often, until deep golden all over and cooked through, 4-5 min. If they brown faster than that, lower the heat.
- 9
Lift out with a slotted spoon and drain on paper towels.
- 10
Serve warm.
