15 ingredients

12 steps

What you need

  • 500 g (1 lb) ground beef, about 15% fat
  • 1 large egg
  • 35 g (1/3 cup) dry breadcrumbs
  • 2 tbsp Worcestershire sauce, divided
  • 1 tsp Dijon mustard
  • 2 cloves garlic, finely chopped
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil
  • 1 large onion, thinly sliced
  • 225 g (8 oz) cremini mushrooms, sliced
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 420 ml (1 3/4 cups) beef stock
  • parsley, chopped, for garnish

Method

Restated from the original video

  1. 1

In a large bowl, combine the beef, egg, breadcrumbs, 1 tbsp of the Worcestershire sauce, the mustard, garlic, salt and pepper.

  2. 2

Mix lightly with your hands until just even; overworking makes the patties dense.

  3. 3

Shape the mixture into 4 oval patties about 2 cm (3/4 in) thick.

  4. 4

Heat the oil in a large frying pan over medium-high heat until it shimmers.

  5. 5

Sear the patties until a deep brown crust forms, 4-5 min per side. Move them to a plate; they will finish cooking in the gravy.

  6. 6

Tip the onion and mushrooms into the fat left behind. Cook, stirring now and then, until their liquid has evaporated and they are browned, 7-9 min.

  7. 7

Push the vegetables aside, lower the heat to medium and melt the butter in the cleared space.

  8. 8

Sprinkle in the flour and stir for 1-2 min so it loses its raw taste.

  9. 9

Pour in the stock a little at a time, whisking so no lumps form, then stir in the remaining Worcestershire sauce.

  10. 10

Return the patties and any juices on the plate to the pan, spooning gravy over them.

  11. 11

Cover and simmer gently until the gravy has thickened and the beef is cooked through, reading 71 °C (160 °F) in the center, 8-10 min. Loosen the gravy with a splash of water if it gets too thick.

  12. 12

Taste the gravy and adjust with salt and pepper. Serve with the gravy spooned over and parsley scattered on top.
