What you need

  • 2 instant ramen noodle blocks, about 110 g each, seasoning packets not needed
  • 2 tbsp gochugaru, fine Korean chili powder
  • 1 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tsp chicken stock powder
  • 2 garlic cloves, finely grated
  • 1 tbsp toasted sesame oil
  • 1 tsp toasted sesame seeds
  • 1 green onion, thinly sliced

Method

Restated from the original video

  1. 1

In a small bowl, stir the gochugaru, gochujang, soy sauce, sugar, chicken stock powder, garlic and sesame oil into a smooth, thick paste.

  2. 2

Bring 600 ml water to a boil in a saucepan.

  3. 3

Add the noodles and boil for 4-5 min, loosening them with chopsticks as they soften.

  4. 4

Scoop out 100 ml of the cooking water, then drain the noodles and put them back in the pan.

  5. 5

Set the pan over medium heat and add the paste with 4 tbsp of the saved water.

  6. 6

Stir-fry for 30-60 seconds until the sauce clings to every strand and turns glossy. Loosen with a little more water if it looks dry.

  7. 7

Pile into bowls, top with the sesame seeds and green onion, and serve hot.

About buldak bokkeummyeon

Instant noodles boiled briefly, drained, then tossed in a thick, fiery sauce of gochujang and gochugaru until every strand is coated. Dry rather than brothy, and meant to be aggressively spicy.

What cooks argue about

The real variable is how much of the packaged sauce and reserved noodle water you use: more water loosens the sauce and tames the heat, less water keeps it thick, dry, and considerably hotter.
