Buldak Bokkeummyeon
Instant noodles boiled briefly, drained, then tossed in a thick, fiery sauce of gochujang and gochugaru until every strand is coated. Dry rather than brothy, and meant to be aggressively spicy.
Where it comes from
The dish is a packaged instant noodle product that launched in South Korea in 2012, built around extreme heat as its selling point, and it spread internationally through online eating-challenge videos rather than any restaurant tradition.
What cooks argue about
The real variable is how much of the packaged sauce and reserved noodle water you use: more water loosens the sauce and tames the heat, less water keeps it thick, dry, and considerably hotter.
