Bibimbap
A bowl of rice topped with an arrangement of seasoned vegetables, a fried or raw egg, and gochujang, mixed together at the table so every bite carries a bit of each ingredient. The name literally means mixed rice.

Where it comes from
Bibimbap likely began as a way to use up leftover banchan, the small side dishes served with Korean meals, combining them with rice rather than throwing food away. Jeonju in particular built a strong regional identity around the dish.
What cooks argue about
Cooks argue over dolsot, the hot stone bowl that crisps the bottom layer of rice into a crust, versus a regular bowl that keeps the rice soft throughout but skips that textural contrast entirely.
