Kimchi Bokkeumbap

Day-old rice fried with chopped kimchi, spam, and gochujang until the rice picks up a red tint and slightly charred edges, usually topped with a fried egg. Sour, salty, and a little smoky from the pan.

Where it comes from

The dish grew out of the same postwar scarcity that shaped budae-jjigae, using kimchi that had fermented past its freshest point and spam as an accessible protein, turned into a fast, one-pan meal rather than a stew.

What cooks argue about

Cooks argue over how sour the kimchi should be before it goes in the pan: well-fermented kimchi gives more depth to the fried rice, while fresher kimchi is milder but leaves the dish tasting flatter.
