  • 1 onion, finely diced, about 150 g (5 oz)
  • 2 cloves garlic, minced
  • 80 g (1 cup) dried breadcrumbs, plain
  • 80 ml (1/3 cup) milk
  • 2 large eggs
  • 3 tbsp ketchup, for the meat
  • 1 tbsp Worcestershire sauce, for the meat
  • 2 tbsp parsley, finely chopped
  • 1 tsp dried oregano
  • 1 tsp fine salt

Method

Restated from the original video

  1. 1

Heat the oven to 175 °C (350 °F) and line a rimmed baking tray with baking paper.

  2. 2

In a large bowl, beat the eggs with the milk, then stir in the breadcrumbs and let them soak for 5 min.

  3. 3

Add the beef, onion, garlic, the 3 tbsp ketchup, 1 tbsp Worcestershire, parsley, oregano, salt and pepper.

  4. 4

Mix with your hands until evenly combined, but stop as soon as it comes together so the loaf stays tender.

  5. 5

Tip the mixture onto the tray and pat it into a firm loaf about 10 cm (4 in) wide, 20 cm (8 in) long and 5 cm (2 in) tall.

  6. 6

    Bake for 45 min.

  7. 7

Meanwhile, stir the 120 ml ketchup, brown sugar, vinegar and 1 tsp Worcestershire together in a small bowl until smooth.

  8. 8

Take the loaf out and spread the glaze over the top and sides.

  9. 9

Raise the oven to 200 °C (400 °F) and bake until the glaze is sticky and darkened at the edges and the centre of the loaf reads 71 °C (160 °F), 15-20 min.

  10. 10

Rest the meatloaf on the tray for 10 min so the juices settle, then cut into thick slices.

About meatloaf

Ground beef mixed with breadcrumbs, egg, and onion, shaped into a loaf and baked, usually glazed on top with a ketchup-based sauce.

What cooks argue about

Cooks argue over baking free-form on a sheet pan, which lets fat drain away, against baking in a loaf pan, which holds moisture but can leave the loaf sitting in grease.
