Method
Restated from the original video
- 1
Toast the sesame in a dry frying pan over low heat, stirring, until golden and fragrant, 6-8 min. Tip into a large bowl.
- 2
Chop the peanuts coarsely and add them to the sesame.
- 3
Line a baking tray with parchment and rub the parchment, a rolling pin and a sharp knife with the oil.
- 4
Combine the sugar, honey and water in a heavy saucepan. Stir over medium heat until the sugar dissolves, then stop stirring.
- 5
Boil without stirring until the sugar mixture turns amber and reads 145 °C (295 °F) on a candy thermometer, 8-10 min.
- 6
Take the pan off the heat and pour the hot sugar over the sesame and peanuts. Stir quickly for 20 sec, until everything is coated.
- 7
Tip the mixture onto the tray, cover with a second sheet of oiled parchment, and roll it into a rectangle about 1 cm thick. Work fast and take care, the candy is very hot.
- 8
Cut into bars about 2 x 6 cm while still warm.
- 9
Cool completely, about 30 min, then break apart. Store airtight.
