Garlic and Ginger Snow Peas, Wok-Tossed
7 ingredients
6 steps
What you need
- 300 g (10 oz) snow peas, stem ends and strings removed
- 1 1/2 tbsp peanut oil
- 2 cloves garlic, thinly sliced
- 1 cm fresh ginger, cut into thin slivers
- 1/2 tsp salt, or to taste
- 1 tbsp Shaoxing wine
- 1/2 tsp toasted sesame oil
Method
Restated from the original video
- 1
Rinse the snow peas and dry them well, since water in the wok makes them steam instead of sear.
- 2
Heat a wok over the highest heat until it smokes lightly, then add the peanut oil.
- 3
Add the garlic and ginger and stir for 10 seconds, without letting them brown.
- 4
Add the snow peas and stir-fry constantly until bright green and glossy with a few browned spots, 2-3 min.
- 5
Sprinkle in the salt, splash the Shaoxing wine around the edge of the wok and toss for 20 seconds.
- 6
Turn off the heat, toss with the sesame oil and serve right away. The peas should stay crisp-tender.
