Glossy Red Candy Apples on a Stick
7 ingredients
10 steps
What you need
- 6 small tart apples, such as Granny Smith
- 6 wooden sticks, or sturdy skewers
- 400 g (2 cups) granulated sugar
- 240 ml (1 cup) light corn syrup
- 120 ml (1/2 cup) water
- 1/2 tsp red food coloring, gel or liquid
- neutral oil, for the baking sheet
Method
Restated from the original video
- 1
Pull the stems off the apples. Wash the apples in hot water to strip off the wax, then dry them completely, since any moisture makes the candy slide off.
- 2
Push a wooden stick firmly into the stem end of each apple, about two thirds of the way in.
- 3
Freeze the apples for 20 min so the coating sets the moment it touches them.
- 4
Line a baking sheet with parchment and brush it lightly with oil.
- 5
Put the granulated sugar, light corn syrup and water in a heavy medium saucepan over medium heat. Stir until the sugar dissolves, then stop stirring.
- 6
Boil without stirring until a candy thermometer reads 150 °C (300 °F), 10-15 min. This is the hard crack stage.
- 7
Take the pan off the heat and stir in the red food coloring until the color is even. Wait 30 seconds for the bubbles to settle. The syrup is extremely hot, so keep hands and sleeves clear.
- 8
Tilt the pan, dip one apple and twist it to coat all sides. Lift it out and let the extra candy run off for a few seconds.
- 9
Stand the apple on the oiled sheet and repeat with the rest. Reheat the syrup gently if it thickens too much.
- 10
Leave the apples until the candy is hard and glassy, about 30 min. Eat the same day.
