8 ingredients
8 steps
What you need
- 500 g (1 lb) pork spare ribs, cut into 4-5 cm (2 in) pieces
- 500 g (1 lb) lotus root
- 4 slices fresh ginger
- 6 dried red dates, rinsed
- 1 tbsp dried goji berries, rinsed
- 2 l (2 quarts) water
- 1 1/2 tsp salt, to taste
- 1/4 tsp white pepper
Method
Restated from the original video
- 1
Scrub and peel the lotus root. Cut it crosswise into slices 1.5 cm (1/2 in) thick, halve any wide ones and drop them in a bowl of cold water so they stay pale.
- 2
Put the ribs in a pot, cover with cold water and bring to a boil. Boil for 3-4 min, until grey scum rises.
- 3
Drain the ribs and rinse them under running water to wash off the scum.
- 4
Rinse out the pot. Return the ribs with the ginger, dates and 2 l water and bring to a boil, skimming off any foam.
- 5
Partly cover the pot, turn the heat to low and simmer for 30 min.
- 6
Drain the lotus root and add it to the pot. Simmer, partly covered, until the lotus root is soft and starchy and the pork is cooked through and pulls easily from the bone, about 1 hour.
- 7
Add the goji berries for the last 10 min of cooking.
- 8
Season with the salt and white pepper, tasting as you go. Ladle into bowls with ribs and lotus root in each.
