Lemon Garlic Tahini Sauce
6 ingredients
5 steps
What you need
- 120 g (1/2 cup) tahini, well stirred
- 60 ml (1/4 cup) lemon juice, fresh
- 2 cloves garlic
- 1/2 tsp salt
- 1/4 tsp ground cumin
- 100 ml (1/3 cup) ice water, plus more as needed
Method
Restated from the original video
- 1
Mash the garlic with the salt on a board into a smooth paste.
- 2
Whisk the tahini, lemon juice, garlic paste and cumin in a bowl. The mix will seize into a stiff paste, which is normal.
- 3
Add the ice water 1 tbsp at a time, whisking after each, until the sauce turns pale, smooth and pourable like heavy cream.
- 4
Taste and adjust with more salt or lemon juice. Thin with a splash of water if it is too thick.
- 5
Serve over falafel, roasted vegetables or grilled meat. It keeps in the fridge for 5 days; loosen with a little water before using.
