What you need

  • 600 g (1 1/3 lb) boneless chicken breast or thigh, cut into 4 cm chunks
  • 1 tbsp ginger-garlic paste
  • 1 tbsp lemon juice
  • 1 tsp salt, plus extra to taste
  • 1/2 tsp white pepper, ground
  • 30 g (1/4 cup) cashews, soaked in hot water for 15 min
  • 100 ml (1/3 cup + 1 tbsp) heavy cream
  • 100 g (1/3 cup) thick plain yogurt, strained if watery
  • 40 g (1/2 cup) mild processed or cheddar cheese, finely grated
  • 1 tbsp cornflour
  • 2 green chillies, seeded and finely chopped
  • 1/2 tsp ground green cardamom
  • 1/4 tsp ground nutmeg
  • 1 tsp dried fenugreek leaves, crushed between the palms
  • 1 tbsp fresh coriander, chopped
  • 2 tbsp butter, melted, for basting

Method

Restated from the original video

  1. 1

Toss the chicken with the ginger-garlic paste, lemon juice, salt and white pepper. Leave for 15 min while the cashews soak.

  2. 2

Drain the cashews and blend them with the cream to a smooth paste.

  3. 3

In a large bowl, beat the cashew paste with the yogurt, cheese, cornflour, green chillies, cardamom, nutmeg, fenugreek and coriander until no lumps of cheese remain.

  4. 4

Add the chicken and turn each piece until thickly coated.

  5. 5

Cover and refrigerate for at least 2 hours, or up to overnight.

  6. 6

Take the chicken out of the fridge 30 min before cooking. If using wooden skewers, soak them in water meanwhile.

  7. 7

Heat the oven to 230 °C (450 °F) with a rack in the top third. Line a tray with foil and set a wire rack on it.

  8. 8

Thread the pieces onto skewers so they touch but are not squashed, and lay them on the rack.

  9. 9

Roast for 8 min, then turn the skewers and brush with the melted butter.

  10. 10

Roast for 6-8 min more, until the coating has brown spots and the chicken is cooked through, with no pink inside and a reading of 74 °C (165 °F) at the centre of the thickest piece.

  11. 11

Serve hot, straight off the skewers.
